Green Cooking

Dates: July 8-12
9 am - 3 pm
Grades: Students entering 5th and 6th grades in the fall of 2013
Cost: $350 (lunch included)
Learn to incorporate whole, natural and local foods into everyday cooking. Students will understand the foundations of healthy food and eating—WHY something is good and HOW to use it. The Bay Area offers a bounty of projects and field trips that will inspire and educate students of this course about ways to support a sustainable, nutritious, practical and delicious diet. The class will visit farmers’ markets, restaurant kitchens and green grocery stores such as Bi-Rite Market. Reading, research and discussion on the politics of food in our global culture and partnering with local organizations such as Planet Organics on these topics will be incorporated. Students will become top chefs and prepare seasonal juices, smoothies, soups, salads and other seasonal recipes.
Instructor: Christine Buell
Christine Buell has her BA in Literature from UC Santa Cruz and MA in Catholic Educational Leadership from USF. She is currently SHC’s assistant principal for student life, overseeing all cocurricular programs including SHC’s athletics and performing arts programs. She also teaches SHC’s online advanced placement art history course. As a mother of two who values nutrition and a self-proclaimed “foodie,” Buell has taught four cooking classes at SHC.
